SUMMER THE ITALIAN WAY

Learn to cook a variety of different summer dishes with renowned chef and tutor, Felice Tocchini.
This workshop will give you confidence, wake up your taste buds and show you new ways of using seasonal produce.
All the ingredients will be readily available - in fact, you may have them growing in your garden, which will make the end results even fresher - but you will learn a new approach and a new spin on what you make.
The day will start with coffee at 10am and a chance to meet your fellow students. Chef Felice will start his demonstration at 10:30am, showing you each stage of the food preparation for each course, giving you the chance to taste as he works and ask him questions.
At the end of the demonstration, you will be served a 3 course lunch with wine and have the chance to probe him further about any aspect of cooking.
A BIT ABOUT OUR CHEF
Chef Felice Tocchini is well known for his restaurant, Feli’s ( formerly Fusion Brasserie), in Hawbridge, Stoulton, Worcestershire, where at the weekend he delights diners with his passionate creativity - cooking up fresh quality ingredients with his signature Fusion twist.
Congenial and friendly, Felice has become quite a celebrity away from the restaurant too. He has appeared on BBC’s One Show, and Country File, Midlands Today, The gadget show and Heart of the Country and cooked on BBC Woman’s Hour to name but a few media appearances. He has worked with schools promoting fresh seasonal produce and teaching children the wonders of cooking. Also, in 2000 he was appointed honorary chef by the British Sprouts Association to promote the much maligned Brussels sprout and his invention of the famous Sprouty Cake has become legendary. It has earned him a place in “The Sprout Book” published last year, and fans of sprouty cake have sprung up all over the globe, from Worcestershire to USA and even Australia! He says: “Working with Sprouts is what has brought me in contact with national media, television and radio. Sprouts are a bit like marmite, people seems to either love or hate them, but everyone wants to talk about them.”
Fresh seasonal produce has always been top priority for Felice. From the age of six living in Tuscany he used to help his Mum and Grandma cook up recipes in their kitchen with ingredients gathered from the family allotment. During the appearances at three of the Malvern Three Counties Show, where he’ had his own unique spot, “Felice’s Kitchen’, he created the garden cake which was a replica of one of the show gardens. For Taste of Birmingham he revealed even more surprises creating a pizza that contained your quota of five a day.
